Cranberry Orange Streusel Scones

NEW Creation: Cranberry Orange Streusel Scones!

Found some fresh cranberries that I froze after the holidays today in my garage freezer!!!

Nice to have them now since most access in the summer is just dried cranberries and they always have sugars added and can’t be used when avoiding carbs and sugar! Baked some fresh scones with this find! Created my very own recipe ratios (I am really getting the hang of baked good ratios and the chemistry of it…especially with specialty low carb flours and sugars!) for my nut flours (coconut and almond) with a touch of King Arthur Keto Flour and a great sugar sub mix of swerve, allulose and a dab of Splenda! Used 1/8 t of an orange koolaid packet so batter wasn’t effected by excess liquids and it has .5 net carbs as opposed to the high carbs in real orange juice and adds a good bang of tangy orange needed! Some other normal staple ingredients for scones and a sugar free pinch of a keto streusel blend I made on top! It worked great! Baked great! Tasted great! Froze half to bake later and baked 6 today! 2.6 net carbs per regular good size scone!
